Delicious Dutch Oven Brunch
One of the favorite activities at Alumapalooza is the Dutch Oven Cooking workshop led by accomplished camp cook Matt Hackney.
At Alumapalooza 6 (May 26—31, 2015…have you registered yet?) you’ll cook side by side with Matt Saturday morning at the hot coals as he demonstrates two delicious original recipes: German Berry Pancake Done Dutch, and Mountain Man Breakfast Casserole.
When your Dutch oven dish is ready, plan to share it with hungry Alumapalooza attendees at the after-class brunch.
Cast Iron cookware manufacturer Lodge will sponsor the workshop and brunch; participants will make use of giveaways during the cooking session and Lodge Logic Dutch Ovens will be among the coveted door prizes open to all!
To participate, bring your Dutch oven and the following ingredients (the complete recipe will be available at Alumapalooza)—
German Berry Pancake Done Dutch
You’ll need:
1 cup flour, 1 teaspoon kosher salt, and 2 tablespoons sugar, tossed in a resealable storage (Ziploc) bag
6 large eggs
1 cup milk
1/4 cup butter
1 cup raspberries
1 cup blueberries
Mountain Man Breakfast Casserole
You’ll need:
1 bag frozen hash browns, any style
1 onion, chopped (Matt recommends Vidalia)
(Option: Replace potatoes and onions w/ 2 bags of Southwest-style “Simply Potatoes” or leftover baked potatoes cut into cubes)
1 lb Sausage; turkey Polska Kielbasa works well
1 dozen eggs
4 cups shredded cheese
Your favorite condiments: salsa, hot sauce, ketchup, BBQ sauce, seasoned salt, chopped green chilies, etc.
